This is a quick and easy broccoli side dish that you can use to accompany a main dish. All-in-all, this dish will take less than 15 minutes to get to the table. You can adjust the heat by varying the amount of red pepper flakes, and you can add more garlic if you like it garlicy. The combination of frying and steaming results in enhanced flavour and texture.
Pre-heat large sauté pan over medium high heat. Add 2 tbsp of olive oil to pan.
Once oil starts to smoke, immediately add broccoli stem coins. Stir frequently until coins are beginning to brown, about 3 minutes.
Add red bell pepper strips to pan and stir until blistering, about 2 minutes.
Reduce heat and add broccoli florets. Stir fry for 2 minutes.
Create a well in middle of pan and add remaining 1 tbsp of olive oil. Once oil is shimmering, add garlic and red pepper flakes. Cook until fragrant, about 1 minute, stirring constantly.
Add 1/3 cup of water to pan and cover immediately. Let vegetables steam for 2 minutes. Remove lid.
