One of my favourite kitchen tools is a fine mesh strainer. I use it for everything from cleaning produce, straining boiled vegetables, and draining liquids from a can of beans.
However, when it comes to making homemade stock and broth, you need something a little more robust than your average fine mesh strainer. Luckily, I upgraded to the Matfer Bourgeat Bouillon Strainer, and I have no regrets. I truly believe this is one of the best strainers for broth and stock making.
When you’re making large amounts of stock, you need a strainer that can handle the large volume and allow for stable hands-free operation to keep yourself safe from hot liquids.
Made in France, the Matfer Bourgeat Bouillon Strainer is specifically designed for straining broth and other liquids (e.g. sauces, purees, yogurt, custards, cheese whey, etc.) It is made from durable stainless steel (rust free!) and features a fine mesh design—perfect for removing impurities and producing a clear, flavorful broth. The mesh is so fine that you can forgo using cheese cloth for many applications.
The Matfer Bourgeat Bouillon Strainer is durable; I frequently use a wooden pestle to extract every last bit of juice from my stock ingredients. This is a pretty rough process and results in sharp bones being pushed up against the mesh. A weak construction would easily rip and tear; however, I’ve been using this strainer for a couple years now and there’s not a single tear in the mesh. The same can’t be said for most fine mesh strainers that do fine with light tasks but often tear and fall apart when you try to do anything heavy with them.

And lastly, one of my favourite features of the Matfer Bourgeat Bouillon Strainer/Chinois is the two hooks on the rim, making it easy to hang the strainer on the edge of a large bowl or pot; allowing you to empty out a large pot of hot unstrained stock without worrying about burning your hands. The metal rods surrounding the strainer prevent the strainer from actually touching the bottom of the pot or bowl. And if your bowl/pot isn’t large enough to utilize the hooks, you can purchase an accessory that keeps the strainer sturdy and upright.
The Matfer Bourgeat Bouillon Strainer/Chinois is easy to sterilize; simply place it in the dishwasher when you are done using it.

If you’re looking for a stock pot for making large amounts of broth or stock, I highly recommend the Cuisinart 12 Qt Stock Pot. It’s roomy enough to make a batch of stock or broth for a large family.
You’ll also want to have a fat separator; the Cuisipro Fat Separator employs a unique design; simply pour your stock or broth into the container. Once the fat has settled on surface, place the fat separator above another container and push down on the lever on the handle; this will open up the spout at the bottom of the fat separator. You can then let gravity pour all your liquid into the other container. Let go of the lever once you reach the fat that’s settled on the surface. Then simply discard the fat and repeat as needed.
