Oh, and speaking of that browning, don’t forget to add some liquid, like wine or broth, to your enamelled Dutch oven at the end of your cooking. It will deglaze the bottom of the pot, lifting all that beautiful fond (brown bits); just give it a whisk and you got a wonderful pan sauce!

Enameled Dutch ovens can go from the stovetop to the oven easily. And it’s perfect for braising! Braising is a method where you first sear your food in fat (butter or vegetable oil will work), and then slowly cook it in a liquid, like wine or stock. Just make sure add the lid to the pot after adding your liquid. Braising helps to tenderize the food and infuse it with flavor. It’s a perfect method for tougher cuts of meat, but it’s also suitable for hearty vegetables likes carrots and potatoes.
