Chef Chris Young, founder and former CEO of ChefSteps, collaborator on the Modernist Cuisine cookbook collection, and developer of the popular sous vide immersion circulator, the Joule, is working on a new innovative kitchen product that looks very promising. So promising, that I could see it competing with my favourite ThermoWorks thermometers.
It’s a thermometer. But it’s not any ordinary thermometer. The Combustion Inc. thermometer is wireless, contains eight temperature sensors, and claims to be able to “predict the future!”
This predictive capability comes from the Combustion Inc thermometer’s eight temperature sensors. Those temperature sensors allow the thermometer to measure a profile of the temperature gradient throughout the food. The sensor can take multiple measurements inside and outside the food–including core and surface (wet-bulb) temperatures. Knowing the surface temperature is much more valuable than the oven’s ambient air temperature, as the surface temperature is the actual temperature the food is cooking at and it can be much lower than the oven as the food “sweats”.

All these temperature readings allow the thermometer to estimate the size and shape of food, enabling it to give you a countdown timer for when your food is ready and how much time is needed for resting. According to Chris Young, the timer will also automatically readjust if things are heating up faster than the thermometer initially expects.
Combustion Inc’s website promises that the probe will be able to connect with other smart appliances in the future, although no appliance is specifically named. The thermometer can also be used as a regular instant-read temperature for those times when you just need a quick reading.
The thermometer comes with a separate easy-to-read interface, but you can also use your phone if you prefer. The thermometer allows for 30 hours of data logging at 5 second intervals.
Combustion Inc also claims that its thermometer is “the thinnest wireless thermometer on the market” (“36% smaller cross-sectional area than any other wireless thermometer” to be exact.)
The battery is advertised to last up to 30 hours when active, and up to 100 days when on standby; the battery is rechargeable via a charging case and will get to 80% charge in approximately 10 minutes, and a full charge in approximately 20 minutes according to Chris Young in an eGullet post.
The probe appears to be very durable and versatile. In a video published by Chris Young, he inserts the probe in both a pot of liquid nitrogen (-328 degrees Fahrenheit) and a pot of heated deep frying oil (392 degrees Fahrenheit).
Concerns about batteries leaking into the food have been brought up by eGullet posters; however, Chris Young reassures potential customers that the thermometer is ROHS compliant and that “a leak would be exceedingly unlikely” once the ceramic handle is bonded to the stainless steel tube.
The product is now available for ordering.
